Traditional Japanese Cuisine

Traditionally, meals in Japan consist of one soup dish and three other dishes (one main dish and two side dishes).
This style of cuisine integrates various combinations of cooking methods and seasonal ingredients, including both those from land and sea.
Each meal provides a good balance of nutrients, which is why people in Japan continue to believe that this way of eating is the foundation of a healthy diet.

A Marriage of Eastern and Western Cuisine: The Roots of Yayoi

Following the Meiji Restoration, when Japan opened its doors to the world in the 19th century, cuisine from many different countries flooded into the country. This cuisine then gradually merged with Japan’s own traditional cuisine.
It was during this period of transition, in 1886, that a Western food restaurant called “Yayoi-ken” opened in Tokyo’s Kayabacho. This much-loved restaurant, to which we trace our roots, played a hand in introducing to many people a whole new world of food.
This, then, is the origin of contemporary Japanese food culture.

YAYOI, providing People with Set Meals called “Teishoku”

At YAYOI, we prepare teishoku with a healthy balance of dishes on a single tray. These set meals contain freshly-cooked rice, the staple food of the Japanese people, accompanied by miso soup and other main and side dishes.
We at YAYOI will continue our efforts to promote the unique styles and wisdom of Japanese food culture to the world through our teishoku dishes.
